RECIPE: yummy breakfast sandwich

There is something about the combination of eggs and bacon that instantly makes me think of late breakfasts on weekends, and don’t we all love those? Add a bit of avocado, melted cheese and smokey barbeque sauce and you’ve got yourself an amazing breakfast sandwich for lunch! This recipe certainly wont go down in history as being one of the healthiest – but sometimes a bit of comfort food is highly necessary in my opinion.

What you’ll need:

– 1 egg

– 2 or 3 stripes of bacon

– 1 slice of bread (I used whole wheat toast)

– ripe avocado (about 1/4th of a whole)

– 1 slice of gauda or cheddar cheese

– salt & pepper

– chili (optional)

– barbeque sauce (optional)

Toast the bread and let it cool a bit. Then spread the ripe avocado on it. Prepare bacon in a pan, once it starts getting crispy crack the egg over it and cook it as you would a sunny-side-up egg. Season with salt and pepper. Turn down the heat for the pan, place the slice of cheese over the egg and slowly let it melt. Add the egg with bacon and melted cheese to the toasted bread with avocado. Season with chili if you like it spicy. Serve with barbeque sauce of choice – I used Jack Daniel’s “hot chili” sauce. Enjoy 🙂

    1. Ich hab auch lieber bissi Obst zum Frühstück – habs mir deswegen auch zum Lunch nach der Arbeit gemacht letzte Woche 🙂 Aber für ein spätes Frühstück am Wochenende könnte ichs mir auch vorstellen.
