recently on the menu.

During the week my lunches are usually quick salads or sandwiches, especially when I am busy and don’t want to spend tons of time in the kitchen. To me, lunch is super important. I am not a big breakfast person and I try to stick to light dinners (even thought the occasional burrito makes its way onto my plate), so lunch is my main source of energy.
I wont be sharing the recipes for these meals (since I usually just make them up as I go with whatever is in my fridge) but I thought it might give some of you guys ideas for when you find yourself staring at the refrigerator and don’t know what to make. I love browsing food magazines, blogs or pinterest for yummy inspirations ♥

{grilled beetroot salad with red onion & feta cheese + whole wheat bread with low-fat quark & sliced radishes}

{homemade potato soup with beacon bits & parsley, served with whole wheat bread}

{whole wheat bread with avocado-lime spread, tomatos & spring onion}

{arugula salad with beetroot, tomatos, radishes & feta cheese + toasted ciabatta bread & cranberry juice}

{greek salad – red onion, tomatos, olives, feta cheese – with filled eggs}

{for the filling I used the cooked yellow of the egg, some mustard, low-fat quark and spices}

PS. Yes, I am a little weird when it comes to presenting food … I feel like anything that looks pretty tastes better :) When Soph saw that I used a piping bag to fill those eggs she looked at me like I was a crazy person.

    wow, I’ve probably never seen anyone with a healthier diet than you! do you ever have meat or fish though?

      I know my diet is pretty healthy, but it is mostly because these are actually my favorite foods. I hate ready-made/frozen meals and the thing I enjoy the most are salads. However, you are right, I rarely eat meat or fish. Maybe once or twice a week – which isn’t ideal! Whenever we go out I try to order meat or fish :) And I sometimes have lean ham or turkey with my sandwiches.

    those eggs you prepared are similar to deviled eggs which I believe is an American staple. they’re delicious! I usually make mine with mustard, mayo, relish and peppers, not the healthiest but still not too bad.

      That’s exactly what they are :) Just instead of mayo I used low-fat quark and I skipped the relish. So actually pretty healthy and a good source of protein!

    ich wollte mal fragen, ob du die Rote Beete in rohem Zustand verwendest (weiß nicht ob das überhaupt geht)? Oder ob du die entweder vorher selbst kochst oder bereits gekochte kaufst? Ich liebe Rote Beete, hab sie aber selbst noch nicht verarbeitet.

      Hi Estella,

      ich kaufe eigentlich immer die vorgekochte (eingeschweißte) Rote Beete im Supermarkt. Dann muss ich sie daheim nur noch abwaschen und schneiden :) Aber wollte auch schon ewig mal versuchen sie selbst zu kochen. Hab nur Angst weil es ja so extrem färbt und anscheinend auch einiges an Aufwand ist. Falls ich mich daran versuche sagt ich dir wies war :)
