Since I always love discovering new healthy recipes on other blogs and websites I thought I would share one of my go-to lunches at the moment with you. Its super easy to make and with barely 280 calories an ultra low-cal option. Because of all the vegetables and protein this will keep you full for a while. Even though eggs are a really good source of protein, the yellow of the egg is actually pretty high in calories. Thats why I only use one whole egg and 3 egg whites. If you prefer using all whole eggs I would only use 3 since 4 might be a little much for one person. By using 3 whole eggs you’re at about 380 calories, which is still really good for a lunch or dinner! Obviously you can also use other vegetables than what I used. Sometimes I add zucchini or mushrooms, whatever my fridge has to offer.
