cupcakes.

Yesterday, after work, I decided to make some cupcakes since my boyfriend and I were invited to his parents’ house for dinner. It was his mom’s birthday last week and I wanted to make her a little something, which I could stick candles onto for her to blow out :) My favorite cupcake recipe is for coconut-lime, chocolate cupcakes with just a little bit of rum and coconut milk frosting! YUMMMM!! You can find the recipe here (sorry, it’s in German). I think they turned out pretty cute and my in-laws really liked them :)

PS. I made up my own frosting, instead of the one mentioned in the recipe I used a little bit of whipped cream, some “quark” (low fat) and added a little bit of vanilla sugar, coconut flakes and a little lime juice. It’s super light and very tasty :)

    In welchem Verhältnis mischt du die Sahne und den Quark fürs Frosting? Ist ja mal eine super Variante zum Cream Cheese Frosting!

    @anonymous: ich habe es ungefähr 1:1 gemischt. einen halben becher sahne (ich hab cremefine benützt) mit der hälfte von so einem dings mit mager-quark gemischt. also erst die sahne steif schlagen (mit vanille zucker, ca. 1 gehäufter tL) und dann saft von einer limette dazu geben und dann den quark untermischen :) ich mag diese typisch amerikanischen frostings nicht so gern weil sie mir zu süß sind, das mit dem quark und limette ist total frisch und lecker!
