Yesterday was yet another rainy day in Vienna. I am getting so impatient for summer, or at least a full-on spring, to finally get here and stay for good. I hate having to get my boots and coats back out after I already wore flowery shirts and flats. In a somewhat not so giddy mood I spent most of my day on the couch. I did venture out to the library to work on a paper and grab coffee with a friend but other than that the sofa was my company for the day. With the temperature dropping about 20 degrees from last week I was craving something hearty for dinner. Not wanting to spend too much time away from my dear friend Mr. Couch, I went for the home-made mashed potatoes. It being one of my boyfriends favorite meals, I was able to kill 2 flies at once. Satisfying my craving and making my man happy. The recipe I used is from his mom. The amounts are calculated for it being a side-dish, our full meal consisted of steak, mixed green salad and mashed potatoes with roasted onions. Delicious and totally worth the 2 hours I’ll be spending at the gym today.
5-6 medium size potatoes (makes for 3-4 servings)
Wash and peel the potatoes. (get the floury kind)
Quarter potatoes to similar sized pieces.
Cook until very well done and soft.
Mash with a fork. (or potato masher, if you own one)
Slowly mix (mixer no higher than level 2) in a little whipping cream until consistency is smooth. Be extremely careful, you don’t want it to get chewy because of the starch in the potatoes.
Add a little nutmeg to taste and salt/ pepper if needed. For extra smooth texture (and some additional calories) add butter. I didn’t do this since I didn’t want to add a 3rd hour to my gym-session today :)
