On Monday I picked up an adorable cake stand while Mike and I were at Ikea. I’ve been wanting an elevated platter for cute baked goods for quite a while. It just looks so pretty to displayed on the dining table. After a few weeks of not much time spent in the kitchen I was super excited about finally having a reason to bake a little something on Tuesday. Even if it was just for the purpose of using my cake stand for the first time. Most of my previous baking has been all about the famous cupcake, but this time I felt like trying something new. I also wanted to make sure I made an at least somewhat healthy snack to be sitting in the middle of the table since it is a temptation every time I walk by. After doing some research I came across this recipe and decided to go for it. I did however make some minor adjustments; I only used 3/4 of everything since I only wanted to make one batch of 12 muffins rather than 16. I also used a little less sugar than what they called for and only all purpose flour, no whole wheat flour since I didn’t have any. Other than that I stuck to the recipe and have to admit, I am pretty smitten with the outcome. With these babies “only” counting 190kcal I might just have one or two for breakfast instead of my regular oatmeal tomorrow.

    Ich liebe solche Kuchenplatten, ich hab mir vor einer Woche eine Etagere aus Glas gekauft, die ich auch für Cupcakes und Muffins benutzen werde. Vllt. probier ich dafür mal dein Rezept aus, klingt auf jeden Fall super lecker!
